Anadama bread is a traditional yeast bread of New England in the United States made with wheat flour, cornmeal, molasses and sometimes rye flour.
Finally we made an effort to try one of the recipes from The Bread Baker's Apprentice: Mastering the Art of Extraordinary Bread book. This week we picked Anadama bread on page 108. Instead of baked in the oven, we decide to baked in our bread maker. Since our bread maker can only handle 1kg bread, here are the ingredients based on the book formula:
- 114g polenta
- 152g water
- 170g bread flour
- 5g instant yeast
- 152g water
- 213g bread flour
- 8g salt
- 76g golden syrup
- 19g unsalted butter
After baked, the total weight of the bread is slightly over 800g.
