Ingredients:

  • 150g plain flour
  • 13g (2 teaspoons) baking powder
  • 4g (1/2 teaspoon) bicarbonate soda
  • 2g salt
  • 1 teaspoon cinnamon powder (optional)
  • 250g (2 big) ripe banana
  • 200g sourdough discard
  • 60g caster sugar
  • 70g olive oil
  • 1 large egg
  • 1 teaspoon vanilla essence

Instructions:

  1. Heat the oven to 175 degree (top and bottom heat).
  2. First bowl, combine all the dry ingredients (flour, baking powder, bicarbonate soda, salt and cinnamon powder) and mix them evenly.
  3. Second bowl, mash the banana with a fork.
  4. Combine the sourdough discard, sugar and olive oil into the mashed banana and stir them evenly.
  5. Add the beaten egg and vanilla essence into the wet mixture and mix them evenly.
  6. Combine the dry mixture (first bowl) into the wet mixture (second bowl) until no flour visible. Do not over mix them.
  7. Pour the mixture in the lined 28cm x 16cm loaf pan.
  8. Bake for 45 minutes or until a toothpick comes out clean . Allow to cool on tray for a few minutes before transferring to cooling racks.

This banana bread is very light and crumbly. I will try using two eggs for next time.
